Recipe: Ras Malai

Milk 2 liters
Sugar 1 ½ cup
Green cardamom 6 – 8
Dry milk powder 2 cups
Baking powder 2 tsp
Plain flour 1 tsp
Unsalted butter/oil 2 tbsp
Egg 2
Pistachio as required


Boil milk with green cardamom and sugar till dissolved. Cook for 10 minutes. In a bowl mix together dry milk powder, baking powder, plain flour, oil/butter and eggs. Rub well then make smooth small balls. Add these to the milk and cook on high flame for 5 minutes. Lower flame and cook for 10 to 15 minutes in a covered pan. Garnish with pistachio slices. Serve chilled.
